Chicken and Vegetable Lo Mein
Our take on this Chinese restaurant favorite features tender pieces of chicken breast marinated and stir-fried with a colorful mixture of broccoli, sugar snap peas, carrots and water chestnuts and tossed with noodles in a traditional Asian sauce. What a tasty fortune - less than 400 calories and ready in 20 minutes!

The good news is the taste of this was great and it was easy to prepare. What folks should be aware of is the contents. In a 6 person serving there was maybe 10 oz of chicken and 2 cups of vegetables, but 21 noodle nests! Our nutritionist always talks that women should have 3 - 4 oz of protein per meal and males should have 5 - 6 oz protein per meal. And folks should have at least 1 cup of veges per meal. Folks should be aware that this is not a well balanced meal for 6 people. Using just half the noodles, made the 6 serving meal a decent meal for 2 good eaters and might stretch to 3 light eaters. We could of used all the noodles but then at that point it would be like 95% carbs.
